Ingredients:
  • 3 red onions
  • 400 g lamb neck fillet
  • 6 teaspoons mint sauce
  • 4 teaspoons umami paste
  • 500 g potatoes
Instructions:
  • 1. Preheat your oven to 170ºC/325ºF/gas 3. Peel and roughly chop the onions and dice the lamb into 3cm chunks. Divide the onions and lamb between four 15cm ovenproof bowls, placing them on a large oven tray. 2. Add 1 teaspoon each of mint sauce and umami paste to each bowl. Pour 150ml of water into each bowl. Season with a pinch of sea salt and black pepper. Stir well. 3. Scrub the potatoes quickly and slice them thinly using the thick slicer attachment of a food processor, making slices just under ½cm thick. 4. Divide the sliced potatoes between the bowls, slightly overlapping them to cover the top. Press down on the potatoes to compact everything. 5. Cover the bowls with tin foil and bake for 2 hours. Remove the foil for the last 30 minutes of baking. 6. Before serving, spoon over the remaining mint sauce. Enjoy your delicious meal!
