Crispy almond-Parmesan baked zucchini fries.
Ingredients:
  • 2 zucchini
  • 1 tablespoon salt
  • 0.5 cup ground almonds
  • 0.5 cup grated Parmesan cheese
  • 0.5 teaspoon dried Italian herb seasoning, or to taste
Instructions:
  • Preheat the oven to a piping hot 425 degrees F (220 degrees C) and line a baking sheet with parchment paper for easy clean-up.
  • Cut zucchini into 3-inch lengths, then slice each piece into 9 fries. Place zucchini fries in a colander, sprinkle with salt, and let drain for at least 1 hour to remove excess liquid.
  • In a shallow bowl, beat the eggs. In another shallow bowl, combine almonds, Parmesan cheese, and Italian seasoning. Rinse zucchini to remove salt and pat dry with paper towels.
  • Coat each zucchini piece in beaten egg, then cover in almond coating before placing on the baking sheet.
  • Roast in the preheated oven for 25 minutes, flipping the zucchini halfway, until they are tender and the coating is crispy and golden brown.
