Deliciously seasoned Parmesan zucchini fries with paprika, garlic, and herbs. Low-carb and simple to prepare!
Ingredients:
  • 0.75 cup grated Parmesan cheese
  • 1 tablespoon dried mixed herbs
  • 1.5 teaspoons garlic powder
  • 1 teaspoon paprika
  • 0.5 teaspoon ground black pepper
  • 2 pounds zucchinis, cut into 1/2-inch French fry strips
Instructions:
  • Preheat the oven to 425°F (220°C) while lining a baking sheet with aluminum foil and spraying it with cooking spray.
  • Whisk eggs in one shallow bowl. In another shallow bowl, mix Parmesan cheese, mixed herbs, garlic powder, paprika, and pepper until fully combined.
  • Coat zucchini fries in beaten eggs, shake off excess, and fully coat in Parmesan mixture. Place on the prepared baking sheet.
  • Roast in the preheated oven, flipping once, until beautifully golden and crispy, for 30 to 35 minutes.
