Try this quick and delicious warm salad for a satisfying meal or tasty side.
Ingredients:
  • 60ml olive oil
  • 1 eggplant, chopped
  • 3 red capsicum or yellow capsicum, deseeded, chopped
  • 2 green zucchini or gold zucchini, sliced
  • 1 leek, sliced
  • 2 garlic cloves, chopped finely
  • 1 bunch broccolini, chopped
  • 120g pkt baby spinach leaves
  • 80g olive
  • 50g pkt pine nuts, toasted
  • 60ml caesar salad dressing
  • Salt & freshly ground pepper
  • Shaved parmesan, to serve (optional)
Instructions:
  • Heat the oil in a pan over medium-high heat and sauté the eggplant until golden, about 4-5 minutes.
  • Sauté the capsicum, zucchini, leek, and garlic until golden, around 4 minutes. Add the broccolini and cook for an additional 2 minutes.
  • Combine the vegetables, spinach, olives, and pine nuts in a salad bowl. Serve on plates, drizzle with dressing, and season with salt and pepper. Optionally, sprinkle with Parmesan before serving.
