Ingredients:
  • 300g dried pasta spirals
  • 18.20 gm olive oil
  • 1 425g can tuna packed in oil, drained and gently broken into chunks
  • 1 400g can chickpeas, rinsed, drained
  • 40.00 ml drained capers
  • 1 medium red onion, finely sliced
  • 2 ripe tomatoes, chopped
  • Ground black pepper, to taste
  • Crusty bread, to serve
  • 80mls (1/3 cup) extra virgin olive oil
  • 42.00 gm fresh lemon juice
  • 5.90 gm Dijon mustard
Instructions:
  • Boil the pasta in salted water as per package instructions until al dente. Rinse under cold water, mix with olive oil, and refrigerate in an airtight container until serving.
  • Combine the olive oil, lemon juice, and mustard in a small screw-top jar and shake vigorously until well mixed.
  • To serve, add cooked pasta to a large heat-resistant bowl and cover with boiling water. Stir briefly to warm up. Drain and return to the bowl. Combine with tuna, chickpeas, capers, onion, tomatoes, and pepper. Toss together. Drizzle dressing over salad and gently mix. Enjoy with crusty bread on the side.
