Tuna and macaroni bake

Warm and comforting tuna bake with a crispy topping, perfect for cozy winter evenings.
Ingredients:
  • 145g (1 cup) macaroni pasta
  • 20.00 gm butter
  • 515.00 gm skim milk
  • 23.40 gm wholegrain mustard
  • 125.00 ml grated light tasty cheese
  • 185g can tuna in spring water, drained
  • 40.00 ml flat-leaf parsley leaves, chopped
  • 125.00 ml wholegrain breadcrumbs (see note)
  • steamed vegetables, to serve
Instructions:
  • Preheat the oven to 180°C and grease a 6-cup ovenproof dish. Cook the pasta according to package instructions, then drain.
  • In a large saucepan, gently melt butter over medium-high heat. Add diced onion and sauté for 1 to 2 minutes. Sprinkle in flour and cook, stirring, for another minute. Remove from heat and slowly whisk in milk until smooth. Return to heat and simmer, stirring constantly, until the mixture thickens and comes to a boil, about 5 minutes.
  • Take the pot off the heat and mix in mustard, cheese, tuna, parsley, and pasta. Season with salt and pepper. Transfer the mixture into the prepared dish, sprinkle breadcrumbs on top, and bake until golden for 20 to 25 minutes. Serve alongside steamed vegetables.
