Zucchini pizza casserole with beef, pepperoni, and mozzarella - a delicious twist on pizza!
Ingredients:
  • 4 cups shredded zucchini
  • 0.25 teaspoon salt
  • 2 large eggs
  • 1.5 cups shredded mozzarella cheese, divided
  • 0.5 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 0.5 teaspoon garlic powder
  • 1 pound 85% lean ground beef
  • 0.5 white onion, chopped
  • 1 cup pizza sauce
  • 1 ounce pepperoni slices
Instructions:
  • Heat your oven to a toasty 400 degrees F (200 degrees C) and generously grease a 10x13-inch baking dish.
  • Place zucchini in colander, sprinkle with salt, and press to remove excess water. Allow to rest for 10 minutes before transferring to a large bowl.
  • Mix eggs, half of the mozzarella cheese, Parmesan cheese, Italian seasoning, and garlic powder with the zucchini until well combined. Firmly press the mixture into the baking dish.
  • Place in the oven and bake at the specified temperature for 20 minutes without covering.
  • 1. Preheat a large skillet over medium-high heat. Sauté ground beef and onion until beef is browned and crumbly, about 5-7 minutes. Drain excess grease. Combine cooked beef with pizza sauce and spoon over zucchini mixture in the baking pan.
  • Cover the meat with the rest of the mozzarella cheese and layer on pepperoni slices.
  • Place the baking dish back in the oven and bake for an additional 15 to 20 minutes, or until the mozzarella cheese is perfectly melted.
