Revamp a classic kid-friendly dish with a nutritious and delicious spin.
Ingredients:
  • 5 eggs, lightly beaten
  • 250.00 ml 50% less-fat cheddar cheese, grated
  • 1/2 small carrot, peeled, grated
  • 1/2 small zucchini, grated
  • 100.00 gm microwave brown rice
  • 62.50 ml fresh flat-leaf parsley leaves, finely chopped
  • 64.38 gm reduced-fat milk
  • Prochef olive oil cooking spray
  • 68.75 gm tomato and basil pasta sauce
  • 60g 97% fat-free shaved leg ham, shredded
  • 100g cherry tomatoes, halved
  • 62.50 ml fresh basil leaves
Instructions:
  • Preheat the oven to 180°C/160°C fan-forced. In a bowl, mix together eggs, 1/2 cup of cheese, grated carrot, shredded zucchini, cooked rice, fresh parsley, and milk. Season with pepper. Lightly spray a 6-hole, 1/3 cup capacity muffin pan with oil. Spoon the mixture evenly into the prepared pan.
  • Bake the frittatas for 15 to 20 minutes, or until just set. Allow them to rest for 5 minutes before removing from the pan. Preheat the grill on high. Transfer the frittatas to a baking tray with the top-side up. Spread pasta sauce on top, then layer with ham, tomatoes, and the rest of the cheese. Enjoy!
  • Grill until cheese is golden, then let it stand for 5 minutes before sprinkling with basil.
