Ricotta, ham and tomato lasagne

Try this effortless, one-pan, low-fat ham and ricotta lasagne for a simple yet delicious meal.
Ingredients:
  • olive oil cooking spray
  • 400g reduced-fat ricotta cheese
  • 1 egg yolk
  • 250.00 ml fresh basil leaves, chopped
  • 200g fresh lasagne pasta sheets
  • 412.50 gm tomato pasta sauce
  • 200g light shaved ham, roughly chopped
  • 4 tomatoes, sliced
  • basil leaves, to serve
Instructions:
  • 1. Preheat the oven to 180°C/160°C fan-forced and generously spray a 5cm-deep, 16cm x 25cm (base) ovenproof dish with oil. In a bowl, mix together ricotta, egg yolk, basil, and season with salt and pepper.
  • Layer 2 lasagna sheets at the bottom of the dish. Spread half of the ricotta mixture and 1/2 cup of pasta sauce on top. Add half of the ham and one-third of the tomatoes. Repeat the layers. Finish with the remaining lasagna sheets, sauce, and tomatoes. Give it a quick spray with oil. Bake for 40 to 45 minutes until the lasagna is tender. Let it sit for 5 minutes. Serve with a generous sprinkle of fresh basil on top.
