Ham, tomato and ricotta penne

Succulent ham paired perfectly with fresh salad for a well-rounded dish.
Ingredients:
  • 400g penne
  • 250g tub ricotta
  • 100g shaved ham, chopped
  • 200g punnet grape tomatoes, halved
  • 1 bunch chives, cut into 2cm lengths
  • 125.00 ml parmesan, grated
Instructions:
  • Boil penne in a generous amount of salted water as per package instructions. Once cooked, save 1 cup of cooking liquid and put the penne back in the pan.
  • Add the ricotta, ham, tomatoes, and chives to the mixture. Season generously and mix well, adding some of the reserved cooking liquid to reach desired consistency. Garnish with parmesan before serving.
