Ham, tomato and ricotta calzones

Cheesy folded pizzas bursting with flavor.
Ingredients:
  • 100g shaved light ham, chopped
  • 125.00 ml semi-dried tomatoes, chopped
  • 400g low-fat ricotta cheese
  • 62.50 ml fresh basil leaves, torn
  • 62.50 ml grated low-fat mozzarella cheese
  • 4 sheets frozen reduced-fat ready-rolled shortcrust pastry, partially thawed
  • 82.50 ml fresh white breadcrumbs
  • salad leaves, to serve
Instructions:
  • Preheat your oven to 200°C/180°C fan-forced, and line 2 baking trays with baking paper. In a bowl, mix ham, tomatoes, ricotta, basil, cheese, salt, and pepper until well combined.
  • Place a 20cm round cake pan on the pastry sheets and cut out circles. Sprinkle 1 tablespoon of breadcrumbs onto one pastry circle, leaving a 1cm border. Add one-quarter of the ham mixture on top. Brush the border with egg wash. Fold the pastry over to form a semi-circle, pressing the edges firmly to seal. Repeat the process with the remaining pastry circles, breadcrumbs, ham mixture, and egg wash.
  • Lay the calzones on the baking sheets. Brush with beaten egg. Bake for 20 minutes or until golden brown. Serve alongside fresh salad leaves.
