Ingredients:
  • 400g penne
  • 250g tub ricotta
  • 100g shaved ham, chopped
  • 200g punnet grape tomatoes, halved
  • 1 bunch chives, cut into 2cm lengths
  • 125.00 ml parmesan, grated
Instructions:
  • Boil penne pasta in a large pot of salted water as per package instructions. Reserve 1 cup of cooking liquid before draining the pasta and returning it to the pot.
  • Add ricotta, ham, tomatoes, and chives right away. Season generously and mix well, incorporating enough reserved cooking liquid for moisture. Garnish with Parmesan before serving.
