Fructose-free pizza recipe featuring honey, root vegetables, and fruits. Indulge in the Italian classic without worrying about sugar content from onion and tomato.
Ingredients:
  • 50g small Swiss brown mushrooms, thinly sliced
  • 100g thinly sliced double-smoked leg ham
  • 62.50 ml torn fresh basil leaves
  • 100g mozzarella cheese, sliced into rounds
  • Small fresh basil leaves, to serve
  • 195.00 gm gluten-free cornflour
  • 8g sachet instant dry yeast
  • 20.00 gm caster sugar
  • 64.38 gm milk, warmed
Instructions:
  • Preheat your oven to a toasty 220°C (200°C for fan-forced ovens) and generously grease a 30cm round pizza tray.
  • Prepare pizza base by sifting cornflour into a bowl. In a separate jug, combine yeast, sugar, and milk. Pour yeast mixture, oil, and 1/4 cup warm water into the cornflour. Season with salt and pepper, then mix until a firm dough forms. Transfer the dough to a lightly-floured surface, knead lightly for 2 minutes until smooth, and shape into a 15cm round.
  • Spread the dough onto the tray. Add mushrooms, ham, torn basil, and cheese on top. Drizzle with half of the oil, then season with salt and pepper. Bake for 20-25 minutes until the edges are golden and the cheese is melted. Drizzle with the remaining oil and garnish with basil before serving.
