Indulge in this guilt-free apple pie makeover.
Ingredients:
  • 62.50 ml plain flour
  • 50.00 gm caster sugar
  • 20g reduced-fat (75% less-fat) margarine
  • 4 medium granny smith apples, peeled, quartered, cored
  • 1.25 gm ground cinnamon
  • 5.00 gm cornflour
  • 20.00 gm custard powder
  • 257.50 gm skim milk
Instructions:
  • Preheat your oven to 200°C/180°C fan-forced and line a baking tray with baking paper. In a bowl, mix flour and 1 tablespoon of sugar, add the margarine, and rub the butter into the flour until it looks like fine breadcrumbs. Spread the mixture on the tray and bake for 6 to 8 minutes. Take it out, break it into pieces, then bake for another 2 to 3 minutes until light golden.
  • Cut each quartered apple into 4 slices. In a large non-stick frying pan over medium-high heat, combine apple, cinnamon, 2 tablespoons water, and 1 tablespoon sugar. Cook covered for 10 minutes, stirring occasionally until apple is tender. In a small bowl, mix cornflour with 1 tablespoon water until smooth. Add to apple mixture, stir, and cook for an additional 2 minutes until thickened. Serve and enjoy!
  • In a small saucepan, mix custard powder and the rest of the sugar. Pour in 2 tablespoons of milk and whisk until smooth. Slowly whisk in the rest of the milk until the mixture is smooth. Cook over medium heat until it boils, stirring constantly. Lower the heat and simmer for 2 minutes until the mixture thickens.
  • Divide the apple mixture evenly among four 1 cup-capacity glass bowls. Spoon custard over the apple mixture and sprinkle with pastry mixture. Serve and enjoy!
