Indulge guilt-free in a comforting, creamy low-fat chicken pasta.
Ingredients:
  • 375g spaghetti
  • 1 large brown onion, finely chopped
  • 250g cherry tomatoes
  • 375ml can evaporated milk
  • 40.00 ml chopped fresh chives
  • 100g baby spinach
  • 125.00 ml finely grated parmesan cheese
Instructions:
  • Boil spaghetti in a large pot of water according to package instructions until tender. Drain and return to pot, covering to stay warm.
  • Heat half the oil in a large frying pan over medium-high heat. Cook chicken for 5 to 7 minutes per side until golden brown and fully cooked. Transfer to a cutting board, thinly slice, and cover to retain warmth.
  • In a pan over medium heat, heat the remaining oil. Cook onions and garlic, stirring, for 3 minutes until onions are soft. Add tomatoes and cook for 2 minutes until they are slightly softened. Pour in evaporated milk and add thyme and chives. Season with pepper and bring to a boil. Remove from heat and mix in chicken, spinach, and milk mixture with pasta. Toss everything together, then sprinkle with Parmesan before serving. Enjoy!
