Ingredients:
  • 82.50 ml basil, finely shredded
  • 500g sweet potato, peeled,cut into 3cm pieces
  • 9.20 gm olive oil
  • 1 small onion, finely chopped
  • 2.50 gm ground cumin
  • 1 tsp ground coriander
  • 2 x 400g cans brown lentils, rinsed, drained
  • 82.50 ml packaged breadcrumbs
  • 75.90 gm vegetable oil, for cooking
  • baby rocket leaves dressed with lemon juice, to serve
Instructions:
  • Preheat the oven to 180°C. Place tomatoes cut side up on a baking tray and roast for 30 minutes until tender and golden. Let them cool for 15 minutes. Blend in a food processor until chunky, then season with pepper and mix in half of the basil.
  • Rinse the sweet potato and transfer it to a microwave-safe plate. Cover and microwave on HIGH for 5 minutes until tender. Drain any excess liquid and then transfer the sweet potato to a bowl. Roughly mash with a fork.
  • In a saucepan over medium heat, heat oil until shimmering. Sauté onion for 5 minutes or until lightly golden. Stir in garlic, cumin, and coriander and cook for an additional minute.
  • Combine sweet potato, onion mixture, lentils, salt, and pepper using a fork. Shape into 8 patties and lightly coat both sides with breadcrumbs.
  • Heat oil in a frying pan over medium heat. Cook patties in batches for 2 minutes on each side until golden. Place the patties on plates, spoon over the sauce, sprinkle with remaining basil, and serve with rocket.
