Delicious one-pot ham and red lentil soup with low GI.
Ingredients:
  • 1 medium brown onion, finely chopped
  • 2 medium carrots, peeled, chopped
  • 3 celery stalks, finely chopped
  • 2 garlic cloves, crushed
  • 2 litres chicken style liquid stock
  • 100g piece leg ham (see note)
  • 250.00 ml red lentils, rinsed, drained
  • 62.50 ml fresh flat-leaf parsley leaves, chopped
Instructions:
  • In a large saucepan, warm oil over medium heat. Add onion, carrots, celery, and garlic. Sauté for 5 minutes until the onion is soft, stirring occasionally.
  • Turn the heat up to high and pour in the stock to bring it to a boil. Lower the heat to medium, then stir in the ham and lentils. Let it simmer gently for 20 to 30 minutes until the lentils are tender.
  • Take out the ham from the pan, use a fork to shred it, then add it back to the soup. Let it cook for 2 minutes until heated through. Add parsley, season with pepper, and serve.
