Family-friendly chicken breasts stuffed with ham and melted cheese for a crispy, delicious twist.
Ingredients:
  • 4 (about 200g each) single chicken breast fillets
  • 4 slices Jarlsberg cheese, quartered
  • 1 slice soccerball ham, cut into eighths
  • 3 green shallots, sliced
  • 1 egg, lightly whisked
  • 41.20 gm milk
  • 50g (1/3 cup) plain flour
  • 65g (3/4 cup) dried (packaged) breadcrumbs
  • 36.40 gm olive oil
  • 125g mixed salad leaves, washed, dried
  • 2 small Lebanese cucumbers, sliced
Instructions:
  • Make a lengthwise pocket in each chicken breast without slicing through. Fill with 2 cheese slices, 2 ham slices, 1/4 of the green shallots, and 2 more cheese slices. Seal the edges. Mix the egg and milk in a medium bowl.
  • Dredge chicken in flour, dip into egg mixture, and coat generously with breadcrumbs. Chill on a baking tray in the fridge for 10 minutes.
  • In a large frying pan, heat olive oil over medium-high heat. Add chicken breasts and adjust heat to medium-low. Cook each side for 4-5 minutes until chicken is cooked through (juices should run clear when pierced with a skewer). Serve with salad leaves and sliced cucumber.
