Try this divine cordon bleu chicken with ham and cheese filling, topped with a creamy sauce. Simply irresistible!
Ingredients:
  • 8 skinless, boneless chicken breasts
  • 8 slices cooked ham
  • 4 slices Swiss cheese, cut into 1 inch pieces
  • 1 teaspoon dried thyme
  • salt and pepper to taste
  • 0.25 cup melted butter
  • 0.5 cup cornflakes cereal crumbs
  • 1 (10.75 ounce) can condensed cream of chicken soup
  • 0.5 cup sour cream
Instructions:
  • Prepare all your ingredients and preheat the oven to 400°F (200°C). Lightly grease a 9x13-inch baking dish.
  • Prepare the chicken rolls by flattening each chicken breast half between plastic wrap with a meat mallet until 1/8 inch thin.
  • Lay a slice of cheese on top of each ham slice and season lightly with thyme, salt, and pepper. Roll the ham and cheese into a jellyroll shape, then stuff each chicken breast with the ham and cheese. Secure the ends with toothpicks.
  • In a small bowl, pour the melted butter. In a shallow dish, spread out the cereal crumbs. Dip each chicken roll in the butter, then coat thoroughly with the crumbs before placing them in the baking dish.
  • Roast in the oven until the chicken turns a beautiful golden brown and the juices run clear, for about 40 minutes.
  • Prepare the cordon bleu sauce while the chicken cooks: Combine condensed soup, sour cream, and lemon juice in a small saucepan. Heat gently, stirring occasionally, until well mixed.
  • Enjoy your succulent chicken rolls topped with piping hot sauce. Dig in and savor every bite!
