Chicken Cordon Bleu Rolls

Skip stuffing, flatten chicken breasts, layer with Swiss cheese, ham, spinach, roll up, coat with herby panko, bake for crispy, melty Chicken Cordon Bleu under 400 calories.
Ingredients:
  • 1/3 cup Progresso™ plain panko crispy bread crumbs
  • 1/4 teaspoon dried thyme leaves
  • 1/8 teaspoon garlic powder
  • 1/8 teaspoon salt
  • 2 teaspoons vegetable oil
  • 2 large boneless skinless chicken breasts (8 oz each)
  • 1/4 teaspoon salt
  • 1/2 cup baby spinach
  • 4 slices (0.75 oz each) Swiss cheese
  • 4 slices (0.5 oz each) deli ham
  • 1 egg white, beaten with 1 tablespoon water
Instructions:
  • Preheat oven to 375°F and lightly coat a rimmed baking pan with cooking spray.
  • Cook the Topping ingredients in an 8-inch skillet over medium heat for 6 to 8 minutes, stirring often, until the crumbs are deeply browned. Set aside.
  • Place the chicken breasts on a cutting board and slice each one horizontally to create two 4-oz pieces. Place each piece between plastic wrap or waxed paper and gently pound from the center outwards to flatten to about 1/4 inch thickness.
  • Season the chicken pieces with a pinch of salt. Divide the spinach among the chicken breasts, then layer the cheese and ham on top. Roll up each breast from the narrow end, securing both ends with toothpicks, and place them in a pan.
  • Coat each chicken breast in the egg white mixture and bread crumbs, ensuring they stick well. Roast for 25-30 minutes until chicken is fully cooked and the internal temperature reaches 165°F. Remember to remove toothpicks before serving.
