Delicious chicken cordon bleu roll-ups drizzled with a savory white wine, honey, and mustard sauce. Get creative with ingredient amounts for a personalized touch!
Ingredients:
  • 2 cups white wine
  • 1 teaspoon chopped fresh tarragon
  • 1 teaspoon chopped fresh parsley
  • 1 tablespoon olive oil
  • 1 pound skinless, boneless chicken breast halves
  • 0.5 pound sliced Swiss cheese
  • 0.5 pound sliced cooked ham
  • 2 tablespoons brown sugar, divided
  • salt and pepper to taste
  • 1 tablespoon all-purpose flour
  • 0.25 cup Dijon mustard
  • 3 tablespoons honey
  • 1 tablespoon prepared horseradish
Instructions:
  • Marinate the chicken by combining 2 cups of wine, tarragon, parsley, and oil in a glass dish. Toss the chicken to coat it well. Cover and refrigerate for at least 4 hours.
  • Take out the marinated chicken and transfer the marinade to a large skillet on medium-high heat. Halve the chicken breasts vertically and gently flatten to 1/2 inch thickness. Place a slice of cheese, a slice of ham, and a sprinkle of brown sugar on each piece. Roll and secure with toothpicks, then sear in the skillet with the marinade.
  • Preheat your oven to 325°F (165°C).
  • Transfer the seared rollups to a 9x13 inch baking dish and drizzle a splash of marinade on top of the chicken, saving at least 3 tablespoons in the pan. Season the chicken with salt, pepper, and a sprinkle of brown sugar.
  • Place the chicken rollups in a preheated oven and bake for approximately 30 minutes, or until fully cooked and the chicken juices are clear.
  • To Make Sauce: While the skillet is still hot, sprinkle flour over the reserved marinade. Pour in 2 cups of wine and stir continuously until the sauce thickens. Next, mix in mustard, honey, a touch of brown sugar, and horseradish. Season with salt and pepper, warm the sauce, and enjoy with the chicken rollups.
