Chicken cordon bleu rissoles recipe

Cordon bleu rissoles: A delicious fusion of French and Australian flavors with ham and cheese stuffing.
Ingredients:
  • 500g chicken mince
  • 1 small brown onion, finely grated
  • 75g (1 1/2 cups) panko breadcrumbs
  • 4 slices Swiss cheese, quartered
  • 4 slices ham, quartered
  • 40g (1/4 cup) plain flour
  • 80ml vegetable oil
  • 1 cos or gem lettuce
  • 1 avocado
  • 1 Lebanese cucumber, cut into ribbons
  • 6 radishes, thinly sliced
  • 20.00 ml white wine vinegar
Instructions:
  • In a large bowl, combine chicken, onion, and ¼ cup breadcrumbs. Season generously. Mix well with dampened hands. Divide the mixture into 8 equal portions and shape into patties. Flatten each patty into a rough rectangle. Place cheese at one short end of a patty, top with 2 ham pieces and another cheese slice. Fold the opposite end over, shaping the patty to enclose the filling. Gently flatten. Repeat with remaining mixture to make 8 delicious rissoles.
  • Start by dusting the rissoles in flour, then dipping them in the egg mixture, and finally coating them with breadcrumbs. Chill in the fridge for 15 minutes before cooking.
  • Prepare the salad by mixing the lettuce, avocado, cucumber, and radish in a bowl, then drizzle with oil and vinegar.
  • In a large frying pan over medium heat, heat the oil. Cook the rissoles for 4 minutes on each side until golden. Drain them on a paper towel-lined plate. Serve warm with the salad.
