Irresistible schnitzels stuffed with ham and gooey melted cheese - a sure crowd pleaser!
Ingredients:
  • Zest and juice of 1 lemon
  • 4 slices ham
  • 4 slices Swiss cheese
  • 8 plain chicken schnitzels
  • 500.00 ml breadcrumbs
  • 20.00 ml finely chopped sage
  • Salt & freshly ground pepper
  • 1 egg, lightly whisked
  • 36.40 gm olive oil
  • 30g butter
  • Steamed chat potatoes, to serve
  • Green beans, to serve
Instructions:
  • Cut ham and cheese to match the size of the schnitzel. Place ham and cheese between 2 schnitzel pieces and fasten with toothpicks.
  • On a plate, mix together breadcrumbs, lemon zest, and sage, then season with salt and pepper. Dip each chicken piece in egg, then coat evenly with the breadcrumb mixture.
  • In a hot frying pan, combine olive oil and butter, then sear chicken until golden brown and fully cooked. Set aside chicken to keep warm. Deglaze pan with lemon juice, scraping off flavorful bits with a wooden spoon. Allow to boil for 1 minute.
  • Disassemble toothpicks from chicken and present on plates alongside steamed potatoes and beans. Pour over the savory pan juices and enjoy.
