Chicken cordon bleu

Indulge in homemade chicken cordon bleu with this delectable recipe.
Ingredients:
  • 4 RSPCA approved chicken breast fillets, halved horizontally
  • 50g sow stall free champagne ham, shaved, from the deli
  • 120g extra tasty cheddar, cut into 8 slices
  • 62.50 ml plain flour
  • 2 eggs, lightly beaten
  • 375.00 ml panko breadcrumbs
  • 36.40 gm olive oil
  • 275g pkt amoroso truss tomatoes (see tip)
  • 100g baby spinach
  • Cracked black pepper, to taste
  • Mashed potato, to serve
Instructions:
  • Lightly pound each chicken piece to flatten. Divide ham and cheddar among half the pieces, then sandwich together with the remaining chicken. Dust with flour, shake off excess. Dip in egg, then breadcrumbs to coat. Chill on a tray for 15 minutes.
  • Preheat the oven to 200°C or 180°C fan-forced and line a baking tray with baking paper. In a large frying pan over medium heat, heat oil and butter. Cook the chicken for 3 minutes on each side until golden. Transfer the chicken to the prepared tray and add the tomatoes. Bake for 5 minutes until the chicken is cooked through and the tomatoes are just softened.
  • Sauté spinach over high heat for 1-2 mins. Plate chicken, spinach, and tomatoes, then season with cracked black pepper. Serve with mashed potatoes.
