Savory pasta salad with chicken, ham, Swiss cheese, broccoli, and sweet Dijon dressing.
Ingredients:
  • 1 (16 ounce) package farfalle (bow tie) pasta
  • 2 cups cubed cooked chicken
  • 2 cups cubed fully cooked ham
  • 2 cups cubed Swiss cheese
  • 1 cup broccoli florets
  • 0.25 cup honey
  • 1.5 cups mayonnaise
  • 2 tablespoons Dijon mustard
  • 2 tablespoons distilled white vinegar
  • 2 tablespoons chopped onion
  • 0.5 cup olive oil
  • 0.25 cup white sugar
  • 0.5 teaspoon garlic salt
  • 2 tablespoons chopped parsley
  • 0.25 cup grated Parmesan cheese
Instructions:
  • Fill a large pot with salted water and bring to a vigorous boil. Add bow tie pasta, cook uncovered, stirring occasionally, until al dente, about 12 minutes. Drain in a colander in the sink.
  • In a large bowl, mix together pasta, chicken, ham, Swiss cheese, and broccoli. Set aside. In a blender, combine honey, mayonnaise, mustard, vinegar, onion, olive oil, sugar, and garlic salt until smooth. Stir in parsley. Pour dressing over the pasta mixture, reserving 1/2 cup. Chill salad and reserved dressing in the fridge for at least 1 hour. Before serving, mix in the remaining dressing and Parmesan cheese.
