"Light and delicious carbonara pasta with reduced fat."
Ingredients:
  • 375g spaghetti
  • 150g shortcut rindless bacon, halved lengthways, cut into thin strips
  • 3 eggs, lightly beaten
  • 82.50 ml finely grated parmesan cheese
  • 18.20 gm olive oil
  • Chopped fresh flat-leaf parsley leaves, to serve
Instructions:
  • Boil pasta in salted water according to package instructions until tender. Drain and return to the pan.
  • Heat a frying pan over high heat. Add bacon and cook for 3 minutes, stirring occasionally, until golden and crisp. In a jug, whisk together eggs and cheese. Season with pepper.
  • Combine bacon and oil with pasta over low heat until well mixed. Remove from heat and stir in the egg mixture. Garnish with parsley and enjoy!
