Quick and healthy spaghetti ideal for managing diabetes on a budget.
Ingredients:
  • 1 red onion, halved, thinly sliced
  • 400g cherry tomatoes
  • 36.40 gm extra virgin olive oil
  • 62.50 ml balsamic vinegar
  • 16.00 gm brown sugar
  • 375g spaghetti
  • 60g low-fat feta, crumbled
  • Small fresh basil leaves, to serve
Instructions:
  • Preheat a barbecue chargrill or chargrill pan over medium-high heat. Mix tomatoes, onion, and half of the oil in a bowl. Grill the tomatoes, turning occasionally, for 4 to 5 minutes until blistered, blackened, and slightly softened. Transfer the grilled tomatoes to a heatproof bowl and add the vinegar and sugar. Gently toss to combine, cover, and let sit for 5 minutes before serving.
  • Cook the pasta in a saucepan of boiling salted water following packet directions until tender. Reserve 1⁄4 cup of cooking liquid before draining.
  • Place the cooked pasta back in the pan, then mix in the tomato mixture and the reserved cooking liquid. Gently toss everything together over low heat for about 2 minutes, until the pasta is heated through. To serve, sprinkle with crumbled feta, fresh basil leaves, and a drizzle of the remaining oil.
