A lucky New Year's stew with black-eyed peas, cabbage, ham hocks, and a spicy cayenne kick.
Ingredients:
  • 1 onion, chopped
  • 3 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 3 cups finely shredded napa cabbage
  • 1 pound ham hocks
  • 2 bay leaves
  • 0.5 teaspoon Cajun seasoning
  • 0.125 teaspoon cayenne pepper
  • salt to taste
  • 1 quart chicken stock
  • 1 (10 ounce) package frozen black-eyed peas
  • 3 cups water
  • 1.5 cups basmati rice, well rinsed
Instructions:
  • In a deep pan or stockpot over medium-high heat, warm oil. Saute onion and garlic until transparent, around 5 minutes. Add cabbage, cook until wilted for about 2 minutes. Add ham hocks, bay leaves, Cajun seasoning, cayenne pepper, and salt, stirring for 2 minutes. Pour in chicken stock and black-eyed peas. Bring to a boil, then simmer uncovered for 2 hours on low heat.
  • As the water and rice mingle in the saucepan, let them reach a gentle boil. Lower the heat, cover, and let it simmer until the rice has absorbed all the liquid and achieved its fluffy perfection, around 20 minutes.
  • Before serving, extract the ham hocks from the pot, roughly chop the meat, and add it back to the black-eyed pea mixture. Serve the hot dish over rice.
