Delicious carrot cupcakes made with eggs, brown sugar, oil, carrots, vanilla, cinnamon, and a creamy cream cheese topping.
Ingredients:
  • 0.5 cup vegetable oil
  • 3 eggs
  • 1.25 cups brown sugar
  • 2.25 cups grated carrots
  • 1.6666667461395 cups all-purpose flour
  • 1 teaspoon vanilla sugar
  • 1 (16 ounce) package confectioners' sugar, or as needed
  • 0.5 (8 ounce) package cream cheese (such as Philadelphia®)
  • 3 tablespoons butter
  • 0.5 lemon, juiced
  • 1 lemon, zested
Instructions:
  • Preheat the oven to 350°F (175°C) for the perfect cooking temperature.
  • In a bowl, combine 1/2 cup plus 2 tablespoons of oil, eggs, brown sugar, and grated carrots in the specified order.
  • In a separate bowl, combine flour, cinnamon, baking powder, vanilla sugar, and salt. Stir the flour mixture into the oil mixture until combined. Divide the batter evenly among 12 muffin cups.
  • Place in the center of the preheated oven and bake until a toothpick inserted in the center comes out clean, for 12 to 15 minutes, making sure not to overbake. Allow it to cool completely for about 45 minutes before frosting.
  • Combine confectioners' sugar, cream cheese, butter, lemon juice, and lemon zest in a bowl, mixing until you achieve a smooth, thick, and creamy consistency. Cover with plastic wrap and chill in the refrigerator for at least 30 minutes until the icing is set before decorating your cupcakes.
