"Fluffy carrot cake muffins with luscious cream cheese frosting, lightly spiced for perfection!"
Ingredients:
  • 1.3333333730698 cups all-purpose flour
  • 1.5 teaspoons ground cinnamon
  • 1.5 teaspoons baking soda
  • 1.25 teaspoons baking powder
  • 3 eggs
  • 1 cup white sugar
  • 0.75 cup vegetable oil
  • 2 cups grated carrot
  • 0.25 cup cream cheese, softened
  • 1.5 cups sifted confectioners' sugar
Instructions:
  • Preheat the oven to 350°F (175°C), then grease only the bottoms of 12 muffin cups or line with baking cups. Sift together flour, cinnamon, baking soda, baking powder, and salt, and set aside.
  • Whisk together eggs and sugar until fluffy and pale. Mix in oil, vanilla extract, and grated carrot; gently fold in flour mixture. Transfer batter into lined muffin tins.
  • Bake at the set temperature until a toothpick inserted in the center comes out clean, for about 15-20 minutes. Then, cool on wire racks.
  • Prepare the delightful frosting by whipping cream cheese, butter, vanilla, and confectioners' sugar until light and fluffy. Spread it on the cooled muffins and refrigerate until serving time.
