Marvelous Matzoh Balls

Fluffy matzoh balls made with parsnip, carrot, and matzoh meal, perfect with chicken soup!
Ingredients:
  • 1 medium parsnip, peeled and diced
  • 1 medium carrot, peeled and diced
  • 0.33333334326744 cup shortening, melted
  • 1 cup matzo meal
  • 0.5 cup water
  • 1 teaspoon salt
  • 1 dash black pepper
  • 1 tablespoon minced parsley, or to taste
Instructions:
  • Arrange diced parsnip and carrot evenly in a microwave-safe bowl, drizzle with a touch of water, cover with a paper towel, and microwave on high until easily mashable, about 5 to 10 minutes. Mash until smooth.
  • Combine shortening, eggs, matzoh meal, 1/2 cup water, salt, pepper, mashed carrot, mashed parsnip, and parsley until well blended.
  • Chill covered for 20 minutes in the refrigerator.
  • Shape mixture into balls of chosen size and gently place into simmering water. Cook until fluffy and light in appearance, approximately 5 minutes. Your matzoh balls are now ready to enhance your preferred soup!
