Flavorful Mexican mini-quiches, simple to prepare and guaranteed crowd-pleasers!
Ingredients:
  • 0.25 cup cream cheese
  • 0.25 cup butter
  • 0.66666668653488 cup all-purpose flour
  • 0.5 cup milk
  • 1 cup shredded Monterey Jack cheese
  • 0.5 cup ground chorizo sausage, browned
  • 1 (4 ounce) can diced green chiles
  • 0.5 cup diced red onion
  • 2 tablespoons minced fresh cilantro
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon chili powder
  • 0.5 teaspoon ground black pepper
  • 0.25 teaspoon ground cumin
  • 0.25 teaspoon salt
Instructions:
  • Preheat the oven to 350°F (175°C) and grease 24 mini-muffin cups.
  • Combine cream cheese and butter until smooth. Incorporate flour until dough forms. Shape dough into 24 balls and chill in the refrigerator.
  • Combine eggs and milk in a bowl, then fold in Monterey Jack cheese, chorizo sausage, green chiles, red onion, cilantro, garlic powder, black pepper, ground cumin, cayenne pepper, and salt until well blended.
  • Take one dough ball and place it in each muffin cup, gently pressing the dough to create a cup shape. Fill each dough cup with the egg mixture.
  • Bake in a hot oven until the quiche is firm in the center, about 25 minutes.
