Fluffy carrot muffins with sweet, ripe banana and no added sugar. Enhance moisture with grated apple.
Ingredients:
  • 0.5 cup rolled oats
  • 2 teaspoons flax seeds
  • 1 ripe banana
  • 0.25 cup natural peanut butter
  • 2 tablespoons honey
  • 2 teaspoons vanilla extract
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 0.5 teaspoon ground ginger
  • 0.25 teaspoon ground nutmeg
  • 0.25 teaspoon salt
  • 0.75 cup finely grated carrot
Instructions:
  • Preheat your oven to 375 degrees F (190 degrees C) while you generously grease 6 muffin tin cups.
  • Combine oats and flaxseeds in a small bowl.
  • In a blender, blend together oats, banana, egg, peanut butter, honey, flax seeds, vanilla extract, baking soda, cinnamon, ginger, nutmeg, and salt until smooth. Stir in grated carrots. Spoon batter into muffin cups evenly.
  • Bake in the preheated oven for approximately 18 minutes, or until the tops spring back when lightly pressed. Allow to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
