Freeze pasta for quick veal meal prep!
Ingredients:
  • 2040.00 gm beef style liquid stock
  • 2cm piece fresh ginger, thinly sliced
  • 2 garlic cloves, thinly sliced
  • 1 cinnamon stick
  • 1 star anise
  • 1 bunch choy sum
  • 625g packet fresh veal tortellini pasta
  • 1 large carrot, peeled, cut into matchsticks
  • 2 green onions, thinly sliced diagonally
  • 1 small red chilli, deseeded, thinly sliced diagonally (see note)
  • 82.50 ml fresh coriander leaves
  • Lime halves, to serve
Instructions:
  • In a saucepan over medium-high heat, combine stock, ginger, garlic, cinnamon, and star anise. Cover and bring to a boil. Lower the heat and simmer for 10 minutes to enhance flavors. Strain the mixture, discard the ginger, garlic, cinnamon, and star anise, then return the liquid to the pan.
  • Separate choy sum leaves from stems, chopping the stems into 3 pieces and roughly chopping the leaves.
  • Add the pasta, carrots, and choy sum stems to the flavorful stock. Allow it to come to a gentle boil over medium-high heat for 3 minutes. Then, introduce the leaves and cook for an additional 2 minutes until they are perfectly wilted.
  • Serve the soup in bowls and generously garnish with onion, chili, and coriander. Accompany with lime halves for added flavor.
