Colorful veggies, cheese tortellini, and chicken meatballs stir-fried in an Asian-inspired dish.
Ingredients:
  • 0.25 pound refrigerated cheese tortellini
  • 1 tablespoon sesame oil
  • 1 (12 ounce) package teriyaki ginger chicken meatballs
  • 0.5 cup pineapple chunks, drained
  • 1 tablespoon hoisin sauce
  • 1 cup chopped broccoli florets
  • 1 cup chopped cauliflower florets
  • 2 carrots, chopped
  • 0.5 green bell pepper, chopped
  • 0.5 red bell pepper, chopped
  • 0.5 small zucchini, peeled and sliced
  • 0.5 cup chopped celery
  • 4 green onions, chopped
  • 0.125 teaspoon sea salt
  • 0.125 teaspoon ground black pepper
  • 1 tablespoon chopped fresh parsley
  • 1 tablespoon grated Parmesan cheese
Instructions:
  • Fill a large pot with lightly salted water and bring it to a rolling boil. Add the tortellini and cook until they float to the top, about 1 to 2 minutes. Drain the pasta.
  • In a large skillet or wok over medium-high heat, sizzle sesame oil and stir-fry meatballs, pineapple chunks, and hoisin sauce until meatballs are heated through, for about 7 to 10 minutes. Place the flavorful mix in a bowl and set aside.
  • In a skillet, heat olive oil until it shimmers. Add broccoli, cauliflower, carrots, green bell pepper, red bell pepper, zucchini, celery, and green onions. Season with salt and pepper. Cook and stir until vegetables are just tender, about 5 minutes. Mix in tortellini and meatball mixture until hot. Serve sprinkled with parsley and Parmesan cheese.
