Chicken sausage and baby broccoli penne

Try using flavorful chicken sausage to make a quick and delicious meatball and baby broccoli pasta!
Ingredients:
  • 300g penne
  • 2 bunches baby broccoli, thinly sliced diagonally
  • 60ml olive oil
  • 375g Chicken Sausages, skins removed
  • 1 long red chilli, seeded, thinly sliced
  • 1 garlic clove, finely chopped
  • 1 lemon, zested, juiced
  • 120g pkt Baby Rocket
  • 62.50 ml basil leaves
  • 25g parmesan
Instructions:
  • Boil the penne in a large saucepan of water according to the package instructions until al dente, adding the baby broccoli for the final 2 minutes. Drain thoroughly.
  • Heat 2 teaspoons of oil in a large frying pan over high heat. Cook the sausage, breaking it up with a wooden spoon, for 6 minutes until golden brown and cooked through. Stir in the chili and garlic, cooking for 1 minute until aromatic.
  • Combine the penne mixture, lemon juice, lemon zest, rocket, basil, remaining oil, and half the parmesan in the frying pan. Toss together until well mixed. Season with salt and pepper to taste.
  • Plate the dish individually. Finish by sprinkling the remaining Parmesan before serving.
