Roasted Italian chicken sausage with bell peppers, tomatoes, and crusty baguette slices - a simple and delicious meal.
Ingredients:
  • 1 red bell pepper, cut into 1-inch pieces
  • 1 yellow bell pepper, cut into 1-inch pieces
  • 1 orange bell pepper, cut into 1-inch pieces
  • 1 green bell pepper, cut into 1-inch pieces
  • 1 large sweet onion, cut into thin wedges
  • 2 cups grape tomatoes
  • 2 tablespoons olive oil, divided
  • 1 tablespoon balsamic vinegar
  • 0.25 teaspoon Italian seasoning
  • 0.25 teaspoon salt, divided
  • 0.25 teaspoon ground black pepper, divided
  • 1 (8 ounce) baguette, thinly sliced
  • 1 (12 ounce) package cooked Italian chicken sausage, sliced diagonally into thirds
  • 1 tablespoon snipped fresh oregano
Instructions:
  • Preheat your oven to 425°F (220°C) with racks positioned in the middle and upper thirds. Line two 10x15-inch baking pans with foil.
  • Combine bell peppers, onion, and tomatoes in a large bowl. Drizzle with 1 tablespoon of oil, balsamic vinegar, Italian seasoning, 1/8 teaspoon salt, and 1/8 teaspoon black pepper. Spread mixture onto one of the prepared pans.
  • Roast in the oven until golden brown, about 30 minutes.
  • Drizzle the remaining olive oil over the bread slices and sprinkle with the remaining salt and black pepper. Arrange them on the other prepared pan.
  • Take out the roasted vegetables from the oven and shift them to one side of the pan. Place the sausage on the empty side of the pan.
  • Continue roasting until vegetables are tender and sausage is heated through, approximately 10 to 15 minutes longer. Add the pan with bread during the last 5 minutes of roasting. Sprinkle oregano over vegetables and sausage, then serve with bread.
