Indulge in playful chicken sausage burgers with creamy mayo and sundried tomato pesto.
Ingredients:
  • 650g chicken mince
  • 4 green onions, thinly sliced
  • 1 lemon, rind finely grated
  • 1 garlic clove, crushed
  • 250.00 ml fresh white breadcrumbs
  • 4 long torpedo bread rolls
  • olive oil cooking spray
  • 20.00 gm sun-dried tomato pesto
  • 39.60 gm whole-egg mayonnaise
  • 1 bunch rocket, trimmed
  • oven fries, to serve
Instructions:
  • Preheat the oven to 160°C. In a bowl, mix together minced meat, green onions, lemon zest, garlic, and breadcrumbs. Season with salt and pepper, then combine thoroughly. Divide the mixture into 4 portions and shape each into a 20cm-long sausage. Warm the bread rolls in the oven.
  • Preheat a non-stick frying pan over medium heat. Lightly oil the sausages and cook for 10 minutes, turning occasionally, until fully cooked.
  • Slice warm bread rolls in half lengthwise, keeping one long edge attached. Spread one side with pesto and the other with mayonnaise. Layer rocket on the bottom halves, top with sausage, then press the tops to assemble. Serve with fries.
