Quick and comforting tortellini in 30 minutes.
Ingredients:
  • 9.20 gm olive oil
  • 4 rindless short-cut bacon rashers, thinly sliced
  • 1/2 tsp dried chilli flakes
  • 700g btl Mutti Tomato Passata
  • 500g beef tortellini
  • 150g baby spinach leaves
  • Shaved parmesan, to serve
  • Fresh basil leaves, to serve
Instructions:
  • In a large frypan over high heat, heat the oil until shimmering. Add the bacon and cook for 3 minutes until crispy. Reduce heat to medium, stir in the garlic and chili, and cook for 30 seconds. Pour in the passata, bring to a simmer, and cook for 5 minutes.
  • While the tortellini cooks in a large pot of boiling salted water following the package instructions, drain the pasta. Place the tortellini back in the pot, mix in the sauce and spinach, and toss everything together until well coated.
  • Serve immediately in individual bowls, garnished with Parmesan cheese and fresh basil.
