Elevate tortellini with crispy bacon and sweet peas for a taste of Italy.
Ingredients:
  • 1 package (9 oz) refrigerated cheese-filled spinach tortellini
  • 1 tablespoon olive oil
  • 3 slices thick-sliced bacon, chopped
  • 1 cup frozen sweet peas (from 12-oz bag)
  • 2 tablespoons whipping cream
  • Salt and pepper to taste
Instructions:
  • Prepare tortellini according to package instructions. Drain the tortellini, making sure to save 1/4 cup of the cooking water.
  • In a large skillet, heat oil over medium heat. Cook bacon until crispy, stirring occasionally. Transfer bacon to paper towels and discard excess oil.
  • Toss in peas and sauté for 1 minute. Mix in tortellini and some reserved cooking water. Stir well and cook for 2 to 3 minutes until peas are heated through. Take off the heat, then fold in whipping cream and crispy bacon. Season with salt and pepper to taste.
