Cheese tortellini salad with broccoli, bacon, raisins, sunflower seeds, red onion, and sweet-sour mayo dressing.
Ingredients:
  • 6 slices bacon
  • 20 ounces fresh cheese-filled tortellini
  • 2 teaspoons cider vinegar
  • 3 heads fresh broccoli, cut into florets
  • 1 cup raisins
  • 1 cup sunflower seeds
  • 1 red onion, finely chopped
Instructions:
  • Cook the bacon in a large, deep skillet over medium-high heat until it is evenly browned. Drain, crumble, and set aside.
  • 1. Boil a generously salted large pot of water. 2. Cook tortellini in the boiling water for 8 to 10 minutes until al dente. 3. Drain tortellini and rinse with cold water.
  • Combine the mayonnaise, sugar, and vinegar in a small bowl to create the dressing.
  • Combine the broccoli, tortellini, bacon, raisins, sunflower seeds, and red onion in a large bowl. Drizzle the dressing over the salad and toss to combine.
