Flavorful pesto tortellini salad with broccoli, carrots, red pepper, basil pesto, and olives - great for picnics.
Ingredients:
  • 1 (9 ounce) package cheese tortellini
  • 1 small red bell pepper, julienned
  • 0.75 cup broccoli florets, blanched
  • 0.33333334326744 cup shredded carrots
  • 0.33333334326744 cup pitted green olives
  • 1 clove garlic, chopped
  • 0.5 cup mayonnaise
  • 0.25 cup prepared basil pesto
  • 0.25 cup milk
  • 2 tablespoons grated Parmesan cheese
  • 1 tablespoon distilled white vinegar
  • 1 bunch fresh spinach leaves
Instructions:
  • Prepare all your flavorful ingredients for a culinary masterpiece.
  • 1. Boil a large pot of lightly salted water. Add tortellini and cook until al dente, about 7 to 8 minutes. Drain and cool.
  • Combine the cooked tortellini, bell pepper, broccoli, carrots, olives, and garlic in a spacious bowl.
  • In a separate bowl, mix together mayonnaise, pesto, milk, Parmesan cheese, oil, and vinegar until smooth. Pour the mixture over the tortellini and vegetables, gently tossing to coat evenly.
  • Chill in the refrigerator for about 1 hour until cold. Serve on a bed of fresh spinach leaves.
