Elevate veal tortellini with luscious creamy mushroom sauce.
Ingredients:
  • 625g packet fresh veal tortellini pasta
  • 36.40 gm olive oil
  • 300g button mushrooms, thinly sliced
  • 125.00 ml sun-dried tomatoes, drained, thinly sliced
  • 150.00 gm basil pesto
  • 300ml light thickened cream
  • Green onions, thinly sliced, to serve
  • Salad, to serve
Instructions:
  • Boil pasta in a large saucepan of salted water according to package instructions until tender. Drain the pasta.
  • 1. Heat oil in a pan over medium heat. Saute mushrooms until softened, about 3 to 4 minutes. Add cooked pasta back to the pan along with tomatoes, pesto, and cream. Cook for 2 minutes until heated through. Season with salt and pepper. Divide the tortellini mixture into bowls and garnish with green onion. Serve with a side salad.
