Luscious Lemon-Pumpkin Dessert

Pumpkin pie dessert bars - a clever twist on a classic favorite!
Ingredients:
  • 1 package Betty Crocker™ Sunkist® lemon bar mix
  • 1/3 cup chopped nuts
  • 1 teaspoon pumpkin pie spice
  • 1 can (15 ounces) pumpkin (not pumpkin pie mix)
  • 1 can (5 ounces) evaporated milk (1/3 cup)
  • 3 eggs
  • 1 cup frozen (thawed) whipped topping
Instructions:
  • Preheat your oven to 350°F. Combine Ready-Mixed Crust (dry) and nuts in an ungreased 9x3 inch springform pan or an ungreased 8x8x2 inch square baking dish. Press the crust evenly onto the bottom of the pan. Bake for 15 minutes.
  • Whisk together Filling Mix, pumpkin pie spice, pumpkin, evaporated milk, and eggs until velvety smooth; pour over warm crust.
  • Bake for around 45 minutes or until a knife inserted in the center comes out clean. Let it cool for 15 minutes, then refrigerate uncovered for at least 1 hour until cool. Serve with whipped topping and refrigerate covered until ready to enjoy.
