Luscious lemon madeleines: soft, cake-like cookies with a citrus twist - ideal for a delightful tea time treat.
Ingredients:
  • 0.5 cup white sugar
  • 2 large eggs
  • 5 tablespoons unsalted butter, melted
  • 0.75 cup all-purpose flour
  • 1 teaspoon baking powder
  • 0.5 lemon, juiced and zested
  • 0.25 teaspoon vanilla extract
  • 0.33333334326744 cup confectioners' sugar for dusting
Instructions:
  • In a large bowl, combine sugar and eggs until smooth. Mix in melted butter thoroughly. Slowly blend in flour, baking powder, lemon juice, lemon zest, and vanilla on low speed. Cover with a dish towel and let it rest at room temperature for 1 hour.
  • Preheat your oven to a toasty 375 degrees F (190 degrees C), then generously butter and flour your madeleine molds.
  • Carefully whisk the batter until smooth, then spoon it into the prepared molds, filling them three-quarters full.
  • Place the madeleines in the preheated oven for 10 minutes, then gently remove them from the molds onto a wire rack to cool fully. Finish by sprinkling them with a dusting of confectioners' sugar.
