Enjoy these delicious cookies with a steaming cup of tea.
Ingredients:
  • Grated rind of 1 lemon
  • 3 eggs
  • 75g caster sugar
  • 75g self-raising flour
  • 75g unsalted butter, melted
  • Icing sugar, to dust
Instructions:
  • Preheat your oven to 190°C. Grease an 18-hole madeleine pan. In an electric mixer, whisk eggs with sugar and lemon until they become thick and pale. Carefully fold in the flour, followed by the butter.
  • Transfer the mixture into the pan and bake for 8-10 minutes until golden. Allow it to cool slightly before flipping onto a wire rack. Dust with icing sugar before serving.
