Authentic foolproof madeleines recipe for perfect French treats at home.
Ingredients:
  • 3 eggs
  • 0.5 cup unsalted butter, melted
  • 1 pinch salt
Instructions:
  • In a large bowl, gently whisk together eggs, sugar, and honey for 4 to 5 minutes until the mixture is light and frothy. Be careful not to whisk too vigorously and avoid using high speed on an electric mixer.
  • Sift together flour and baking powder into the egg mixture, gently folding until combined. Stir in melted butter and salt thoroughly. Cover the bowl with plastic wrap and refrigerate the batter for at least 1 hour.
  • Preheat the oven to a piping hot 460°F (240°C).
  • Spoon the batter into silicone madeleine molds, filling each 3/4 of the way.
  • Start by baking in the preheated oven for 1 minute, then lower the oven temperature to 400°F (200°C) and bake for 4 minutes. Finally, reduce the temperature to 350°F (175°C) and bake for an additional 5 minutes.
