Elevate your bagels with classic toppings like salt, sesame seeds, poppy seeds, onion flakes, or everything blend for that perfect flavor and texture.
Ingredients:
  • 1.25 cups water
  • 4.5 cups bread flour
  • 2 tablespoons vegetable oil
  • 1 tablespoon instant yeast
  • 4 quarts water
  • 1 cup honey
  • 2 tablespoons poppy seeds
  • 2 tablespoons sesame seeds
  • 2 tablespoons dried onion flakes
  • 1 tablespoon coarse salt
Instructions:
  • Prepare bagel dough by combining water, flour, sugar, salt, vegetable oil, and yeast in a stand mixer bowl with a dough hook. Mix on low speed for approximately 8 minutes until the dough is well-developed. To check for gluten development, take a walnut-sized piece of dough, flour your fingers, and stretch the dough - if it tears right away, knead the dough more. Developed dough should form a thin, translucent "windowpane."
  • Place your dough in a lightly oiled bowl, cover with plastic wrap and a kitchen towel, and allow it to rise for 2 hours.
  • Gently deflate the dough, then transfer it to a lightly floured surface. Cut the dough into 6 pieces (or more for smaller bagels). Roll each piece into a 6-inch long sausage shape, then connect the ends to create a circle. Repeat with the rest of the dough and allow the bagels to rest for 15 minutes.
  • Preheat your oven to a piping hot 475 degrees F (245 degrees C), and cover a baking sheet with parchment paper. Place small plates of poppy seeds, sesame seeds, and onion flakes beside the baking sheet for easy access.
  • In a large pot, bring 4 quarts of water to a boil. Optional: add honey to the water. Boil three bagels at a time until they float to the surface, around 1 minute per side. Use a slotted spoon to transfer the bagels to a lined baking sheet.
  • Coat the moist bagels with the toppings and place them on the baking sheet, seed-side facing up. Optional: Sprinkle with coarse salt.
  • Bake the bagels in the oven until they turn golden brown, typically for 15 to 20 minutes.
