Shell-shaped cookies infused with zesty orange flavor, perfect for tea or coffee gatherings.
Ingredients:
  • 1 egg, separated
  • 1/2 cup granulated sugar
  • 1 cup Gold Medal™ all-purpose flour
  • 2 tablespoons vegetable oil
  • 1 tablespoon orange-flavored liqueur or orange juice
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons grated orange peel
  • 1/4 teaspoon salt
  • Powdered sugar
Instructions:
  • Preheat the oven to 375°F. Prepare twenty-four 3-inch madeleine molds by greasing and flouring them. Using an electric mixer on high speed, beat the egg white in a small bowl until foamy. Gradually add 1/4 cup of granulated sugar, one tablespoon at a time, until stiff and glossy peaks form for the meringue. Set the meringue aside.
  • In a medium bowl, use an electric mixer on high speed to beat together egg yolk, remaining 1/4 cup granulated sugar, and all other ingredients (except powdered sugar) for 2 minutes. Remember to scrape the bowl occasionally. Finally, gently fold in the meringue.
  • Fill molds two-thirds full. Tap pan firmly on counter to release any air bubbles. Bake for 10 to 12 minutes or until edges turn light brown. Allow to cool briefly in pan before transferring to a wire rack. Sprinkle with powdered sugar right before serving.
