Spooky lemon cookies, ideal for Halloween dessert.
Ingredients:
  • 2/3 cup granulated sugar
  • 4 teaspoons grated lemon peel
  • 1/4 cup lemon juice
  • 1 cup Gold Medal™ all-purpose flour
  • 1/2 cup cornmeal
  • 1/2 teaspoon baking powder
  • 1 cup powdered sugar
  • 1/2 cup semisweet chocolate chips, melted
Instructions:
  • Preheat the oven to 350°F and lightly coat 24 (3-inch) madeleine molds with cooking spray.
  • In a large bowl, cream together the butter and granulated sugar until fluffy using an electric mixer. Mix in 3 teaspoons of lemon peel, 2 tablespoons of lemon juice, eggs, and vanilla until smooth. Gradually mix in the flour, cornmeal, and baking powder until combined. Fill molds with heaping tablespoonfuls of batter.
  • Bake until golden, about 10 to 12 minutes. Allow to cool for 2 minutes, then transfer to cooling racks.
  • Combine 1 teaspoon of lemon peel, 2 tablespoons of lemon juice, and powdered sugar in a small bowl until smooth. Dip the ridged sides of the madeleines in the glaze. Let them rest on cooling racks until the glaze sets. Melt the chocolate and put it in a small resealable plastic bag. Close the bag and use it to pipe "RIP" onto each madeleine.
